Ingredients

2 boneless, skinless chicken breasts (sliced or pounded evenly)

1 cup cooked chestnuts, peeled and roughly chopped

2 tbsp olive oil or butter

2 cloves garlic, minced

½ small onion or 1 shallot, finely chopped

½ cup chicken broth
-
½ cup heavy cream
-
1 tsp fresh thyme (or rosemary)

Salt & black pepper, to taste

Optional: a small splash of white wine

Optional garnish: fresh parsley or thyme
Instructions

Season & sear the chicken
Season chicken with salt and pepper. Heat olive oil or butter in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through. Remove from pan and set aside. -
Build the flavor base
In the same pan, add onion (or shallot) and sauté until soft. Add garlic and cook for 30 seconds until fragrant. -
Add chestnuts
Stir in the chopped chestnuts and lightly toast them in the pan for 1–2 minutes to bring out their natural sweetness. -
Create the creamy sauce
Deglaze with a splash of white wine (optional). Add chicken broth and let it simmer for 2–3 minutes. Pour in the heavy cream, add thyme, and season to taste. -
Bring it all together
Return the chicken to the pan and let everything simmer gently for 5 minutes, until the sauce thickens and coats the chicken beautifully. -
Serve & enjoy
Garnish with fresh herbs and serve warm. Perfect with mashed potatoes, rice, or crusty bread.
